Mother’s Day is around the corner! Why not spoil her with some fluffy flapjacks? We’ve combined Creekside Farm Streaky Bacon with maple syrup and decadent flapjacks that are so soft and fluffy you will probably have to double this recipe.
Ingredients
- 250ml All-purpose flour
- 2 Tsp Baking powder
- Pinch of salt
- 2 Tbsp white sugar
- ¾ Cups of milk
- 1 Large egg
- 2 Tbsp unsalted melted butter
- 1 Tsp pure vanilla extract
- Mont Rouge Extra Virgin Olive Oil
- Creekside Farm Streaky Bacon
- Maple syrup
Instructions
- Combine the salt, sugar, all-purpose flour, and baking powder in a mixing bowl. Be sure to properly mix all of the ingredients.
- In a separate bowl, mix the vanilla essence, melted butter, egg, and milk together. Whisk thoroughly and be sure to not use hot butter as it may cook your egg.
- Combine the dry ingredients with the wet ingredients and whisk lightly. The batter should be thick in consistency, without any visible streaks of flour. You can add a bit of milk and whisk again if the batter is too thick.
- Heat a non-stick pan over a low-medium heat and add a few drops of Mont Rouge Extra Virgin Olive Oil. Scoop some batter into the pan. The more batter you add, the bigger your flapjack will be. We recommend a ¼ cup scooping size.
- Cook your flapjack until one side is golden brown, or until you see small bubbles forming on the surface of the raw batter. Flip your flapjack to cook the other side. Adjust the heat accordingly.
- Add a few drops of Mont Rouge Olive Oil to another non-stick pan and add some Creekside Farm Streaky Bacon.
- Fry the bacon until it is crispy and darkens in colour.
- Serve the flapjacks while they are still hot. Add some bacon and top it off with maple syrup.
- Enjoy!
